They are often asked: why did you choose Caux and this particular vineyard?
The answer is: the terroir. The soil contains large amounts of volcanic basalt, which is rare in the Languedoc. In Caux, they have 4.7 hectares of red vines (Carignan noir, Syrah, Cinsault and Grenache noir) on the slopes at an altitude of 120 meters, facing east.
The soil consists of Villefranchian gravel, silt and basalt. The large amount of basalt - which varies in size from gravel to large stones - brings freshness and a good acid balance to the wines. The vineyard is surrounded by trees and vegetation that ensures a balanced and healthy ecosystem.

75% Syrah, 25% Grenache: 1 lot for 25-year-old Syrah, another lot for 13-year-old and 14-year-old Grenache. The Syrah is grown via cordon royat, the Grenache in gobelet.
The plots are located on three adjacent terraces, oriented to the east at an altitude of 120m in Caux. Basalt rubble, silt and Villafranchian gravel.
Harvest: Manual, yield 25hl/ha.
Vinification: De-stem (without crushing), and gravity barrels. Vinification separately of each grape variety in traditional fermentation with two strains and punches. 20 days after fermentation maceration.
Aging: In 500L barrels (15% new wood) for 12 months.
